For a richer flavor, try using a combination of ground beef and ground pork. Add a tablespoon of Worcestershire sauce to the meatloaf mixture for extra depth. Finely diced bell peppers or carrots can be added to the meatloaf mixture for added nutrients and texture. For a spicier kick, add a pinch of red pepper flakes to the mixture. These meatloaf muffins freeze well. Allow to cool completely, then wrap individually and freeze for up to 2 months. Reheat in the oven or microwave.
