Follow The Directions

01

Step

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5-inch loaf pan. (5 minutes)

02

Step

In a large bowl, cream together sugar, shortening, eggs, and salt using an electric mixer until light and fluffy. (5 minutes)

03

Step

In a separate medium bowl, whisk together flour and baking powder. Gradually add the dry ingredients to the wet ingredients in 2-3 additions, alternating with the reserved maraschino cherry juice, mixing until just combined after each addition. (7 minutes)

04

Step

Quarter each maraschino cherry and gently fold them into the batter along with the chopped pecans. (5 minutes)

05

Step

Spoon the batter evenly into the prepared loaf pan. (2 minutes)

06

Step

Bake in the preheated oven until a toothpick inserted into the center comes out clean, approximately 1 hour. (60 minutes)

07

Step

Let the bread cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. (10 minutes)

For a richer flavor, toast the pecans lightly before chopping. You can also substitute walnuts for pecans if preferred.
To ensure the cherries are evenly distributed, toss them with a tablespoon of flour before adding them to the batter.
This bread freezes beautifully. Wrap tightly in plastic wrap and then foil for best results.

My loaf took a little longer to bake, closer to 70 minutes. Just keep an eye on it.

Be sure to drain the cherries really well; otherwise, the bread might be too soggy.
