Prepare a baking sheet by lining it with wax paper. (5 minutes)

Remove the lid from the ice cream container. Quickly cut away the container and turn the ice cream block onto its side on a cutting board. Insert craft sticks into the side of the ice cream, spacing them evenly. Slice between the sticks to form 3 individual bars. (10 minutes)

Place the ice cream bars on the prepared baking sheet and freeze until completely solid. (8 hours to overnight)

In a microwave-safe bowl, combine the chocolate chips and coconut oil. Heat in 30-second intervals, stirring well after each interval, until the mixture is smooth and glossy. (1 to 2 minutes)

Holding one ice cream bar over a measuring cup, carefully pour the warm chocolate mixture over the bar to coat it completely. Allow the chocolate to set for a few seconds, then pour another layer for a thicker, more decadent shell. Return the coated bar to the wax paper. Repeat with the remaining bars. (15 minutes)

Freeze the bars until the chocolate shell is firm and set. (at least 15 minutes)

For a richer flavor, use dark chocolate instead of semi-sweet.
Add a pinch of sea salt to the chocolate mixture to enhance the sweetness.
Finely chopped nuts, sprinkles, or a drizzle of melted white chocolate make excellent toppings.
Ensure the ice cream bars are thoroughly frozen before dipping to prevent melting.
If the chocolate shell is too thick, add a bit more coconut oil.
