Heat olive oil in a nonstick pan over medium-high heat. Cook and stir shrimp until pink, about 3-4 minutes. Transfer to a bowl. Add bell pepper and onion to the pan and cook until onion is translucent, about 5 minutes; add to the bowl with shrimp and set aside. Clean the pan. (12 minutes)

Place tortillas, one at a time, into the pan and toast over medium-low heat until lightly browned, about 1 minute per tortilla. (5 minutes)

Divide the shrimp mixture evenly among the tortillas. Fold or roll up each tortilla and place them in a baking dish. Top each enchilada with 1 tablespoon of enchilada sauce, followed by a generous sprinkle of Cheddar and mozzarella cheeses. (10 minutes)

Bake in the preheated oven until the cheese is melted and bubbly, about 15 minutes. Let cool slightly before serving. (20 minutes)

For extra flavor, try adding a pinch of chili powder or cumin to the shrimp mixture.
If you don't have low-carb tortillas, you can use lettuce wraps for an even lighter option.
Feel free to customize the filling with your favorite vegetables, such as zucchini or mushrooms.
