Preheat oven to 350 degrees F (175 degrees C). Spray an 8x8-inch baking dish with cooking spray. (5 minutes)

In a bowl, stir together the softened cream cheese, brown sugar, maple syrup, chopped walnuts, cinnamon, vanilla extract, nutmeg, and allspice until thoroughly combined. (5 minutes)

Place the apple halves, cut-side up, into the prepared baking dish. If needed, use small pieces of apple core to stabilize them. Spoon 1 1/2 teaspoons of butter into the core of each apple half. Evenly distribute the cream cheese mixture over the apples, filling the core and covering the tops. (10 minutes)

Bake in the preheated oven for approximately 35 minutes, or until the apples are slightly softened. Remove from oven and sprinkle granola over the top of each apple half, gently pressing it into the filling. (1 minute)

Return to the oven and continue baking for another 10 minutes, or until the apples are cooked through and the granola topping is nicely browned and crisp. (10 minutes)

For a richer flavor, consider using toasted walnuts.
A sprinkle of sea salt over the granola topping adds a delightful contrast to the sweetness.
Serve warm, optionally with a scoop of vanilla ice cream or a drizzle of caramel sauce.
