Follow The Directions

01

Step
5 mins

Layer the ingredients in the slow cooker in the following order: onion wedges, chopped chicken, butter chunks, minced garlic, sliced carrots, cubed potatoes, and cauliflower florets. (5 minutes)

02

Step
2 mins

Sprinkle the curry powder, turmeric, red chile flakes, ground ginger, salt, and pepper evenly over the ingredients in the slow cooker. (2 minutes)

03

Step
3 mins

Pour in enough chicken stock to mostly cover the contents of the slow cooker. Be careful not to overfill. (2 minutes)

04

Step
8 hrs

Cover and cook on Low for approximately 8 hours, or until the chicken is tender and the vegetables are cooked through. If you are available, stir periodically during the cooking process for even heat distribution. (8 hours)

05

Step
10 mins

In the last 15 minutes of cooking, stir in the all-purpose flour to thicken the sauce. Simmer until the sauce reaches your desired consistency, stirring occasionally to prevent lumps from forming. (15 minutes)

For a richer flavor, consider browning the chicken in a skillet before adding it to the slow cooker. This will add depth to the curry.
Adjust the amount of red chile flakes to control the level of spiciness. Start with less and add more to taste.
If you prefer a smoother sauce, use an immersion blender to partially blend the curry after it has finished cooking. Be cautious when blending hot liquids.
Serve this delightful chicken curry with fragrant basmati rice, naan bread, or your favorite accompaniments. A dollop of plain yogurt or a sprinkle of fresh cilantro can add a refreshing touch.
This recipe is easily customizable. Feel free to add other vegetables such as bell peppers, peas, or spinach to suit your preferences.

I found that it needed a little extra salt at the end, but otherwise it was perfect.
