Follow The Directions

01

Step

Prepare the Crust (30 minutes chilling): In a medium bowl, combine the graham cracker crumbs, brown sugar, and cinnamon. Stir in the melted butter until well combined. Reserve 1/2 cup of this mixture for topping. Press the remaining crumb mixture firmly into the bottom of a 9x13-inch baking dish. Refrigerate the crust for at least 30 minutes to firm up.

02

Step

Make the Cream Cheese Layer (30 minutes chilling): In a large bowl, beat the softened cream cheese, confectioners' sugar, and vanilla extract together until smooth and fluffy. Spread this mixture evenly over the chilled graham cracker crust. Return to the refrigerator and chill for another 30 minutes.

03

Step

Assemble the Raspberry Gelatin (15 minutes): In a separate large bowl, whisk together the raspberry gelatin mix and boiling water until the gelatin is completely dissolved. Stir in the lemon juice. Gently fold in the frozen raspberries. The cold raspberries will cause the gelatin to begin to set, so work quickly. Spread the raspberry mixture evenly over the cream cheese layer in the pan.

04

Step

Final Touches and Chilling (2 hours chilling): Spread the thawed whipped topping evenly over the raspberry layer. Sprinkle the reserved graham cracker crumb mixture over the whipped topping. Cover the dish and refrigerate for at least 2 hours, or preferably longer, to allow the gelatin to fully set.

For a more intense raspberry flavor, consider using raspberry extract in the cream cheese layer.
To prevent the crust from becoming soggy, you can bake it at 350°F (175°C) for 8-10 minutes before adding the cream cheese layer.
Feel free to experiment with different fruits in the gelatin layer. Strawberries, blueberries, or mixed berries would all be delicious.
If you don't have frozen raspberries, you can use fresh raspberries, but be sure to chill them beforehand to help the gelatin set properly.
