Follow The Directions

01

Step
5 mins

In a large bowl, whisk together the soy sauce, chicken broth, rice vinegar, sambal oelek, sherry, and cornstarch until the cornstarch is completely dissolved. Set aside. (Prep time: 5 minutes)

02

Step
15 mins

Heat the olive oil in a large skillet or wok over medium-high heat. Add the cauliflower florets and cook, stirring occasionally, until they are golden brown and slightly charred in places. This should take approximately 12-15 minutes.

03

Step
3 mins

Reduce the heat to low. Pour the sauce over the cauliflower and stir to coat evenly. Cook until the sauce thickens, about 2-3 minutes.

04

Step
2 mins

Add the roasted peanuts and minced garlic to the skillet. Cook for an additional 1-2 minutes, stirring constantly, until the garlic is fragrant.

05

Step
0 mins

Transfer the Kung Pao Cauliflower to a serving dish and garnish with the sliced green onion tops. Serve immediately.

For an extra layer of flavor, try adding a pinch of Sichuan peppercorns to the oil while cooking the cauliflower.
If you prefer a milder dish, reduce the amount of sambal oelek chili paste.
Serve over rice or quinoa for a complete meal.
The cauliflower can be roasted in the oven for a healthier alternative. Roast at 400°F (200°C) for 20-25 minutes, or until tender and slightly browned.
