Follow The Directions

01

Step
4 mins

Heat olive oil in a large pot over high heat. Sauté onion, carrots, celery, and garlic until onion is pale golden, about 4 minutes.

02

Step
0 mins

Pour chicken broth and water into the pot; cover the pot and bring the mixture to a boil.

03

Step
20 mins

Stir in the drained and rinsed white beans and frozen cooked meatballs into the broth mixture; bring to a boil, reduce heat to medium-low, cover the pot, and simmer, stirring occasionally, until vegetables are tender and meatballs are heated through, about 20 minutes.

04

Step
1 mins

Mix in the chopped baby spinach, finely grated Asiago cheese, salt, and pepper into the soup; simmer until spinach wilts, about 1 minute.

For a richer flavor, use homemade chicken broth. You can also substitute other types of beans, such as cannellini or kidney beans.
Feel free to add other vegetables, such as zucchini or diced tomatoes, for extra nutrients and flavor.
Parmigiano-Reggiano cheese works beautifully as a substitute for Asiago cheese.
