Use an immersion blender to blend until the mixture is smooth and creamy. Stir in the crisped bacon, and add 1 to 2 tablespoons of the reserved bacon grease for an extra layer of flavor.

For an even smoother mash, ensure the cauliflower is very tender after steaming.
Adjust the amount of reserved bacon grease according to your taste preferences.
