In a large skillet over medium heat, brown the ground turkey, breaking it apart with a spoon. Cook until no longer pink, approximately 5-7 minutes. Drain off any excess grease and transfer the turkey to a bowl.

Add olive oil to the same skillet and heat over medium heat. Sauté the minced leek and red bell pepper until the leek softens, about 5 minutes. Incorporate the minced carrot and continue to cook until slightly tender, another 5 minutes.

Introduce the diced zucchini and minced crimini mushrooms to the skillet. Cook, stirring occasionally, until the mushrooms release their moisture and become tender, approximately 10 minutes.

Add the roughly chopped baby kale to the vegetable mixture. Stir gently as the kale wilts and incorporates into the hash, about 5 minutes.

Return the browned turkey to the skillet. Combine it with the vegetables, and season generously with your favorite hot sauce, salt, and freshly ground black pepper. Cook for another 2-3 minutes, stirring constantly, to ensure the turkey is heated through and all the flavors meld together beautifully. Serve immediately.

For an extra layer of flavor, consider adding a clove of minced garlic along with the leek and bell pepper.
Feel free to substitute other vegetables based on your preference or what you have on hand. Diced sweet potatoes, spinach, or other mushroom varieties work wonderfully.
If you prefer a milder heat, use a milder hot sauce or reduce the amount.
This hash can be prepared ahead of time and reheated. It also freezes well for meal prepping.
Serve with a fried or poached egg on top for an even more substantial breakfast.
