In a saucepan, bring rice and water to a boil. (2 minutes)

Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed. (20-25 minutes)

While rice is cooking, in a bowl, combine diced tomatoes, red wine vinegar, minced garlic, ground cumin, chili powder, salt, dried oregano, and freshly ground black pepper.

Gradually whisk in canola oil until a well-emulsified dressing forms.

In a large bowl, gently stir together the cooked rice, drained and rinsed black beans, and thawed corn.

Pour the dressing over the salad and toss gently to ensure all ingredients are evenly coated.

For an extra layer of flavor, consider grilling the corn before adding it to the salad. Simply grill the thawed corn kernels until slightly charred.
Feel free to customize this salad with other additions such as diced red onion, bell peppers, avocado, or cilantro.
This salad tastes even better after the flavors have had a chance to meld. Prepare it a few hours in advance, or even the day before serving.
The Black Bean Salad can be stored in an airtight container in the refrigerator for up to 5 days.
