Follow The Directions

01

Step
5 mins

Heat vegetable oil in a large stockpot or Dutch oven over medium heat. Add diced onions and crushed garlic. Cook, stirring occasionally, until the onions are softened and translucent (approximately 5 minutes).

02

Step
7 mins

Add lean ground beef to the pot. Cook, breaking it apart with a spoon, until browned and crumbly (about 5-7 minutes). Drain off any excess grease.

03

Step
2 mins

Stir in the whole peeled tomatoes (crushing them slightly with your hands or a spoon), navy beans (with their juice), red chili beans in sauce, rinsed and drained black beans, diced green bell pepper, diced celery, light brown sugar, white vinegar, chili powder, and salt.

04

Step
1 hrs

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the chili simmer gently, stirring occasionally, until the flavors have melded and the soup has thickened (at least 1 hour, but longer is better). Taste and adjust seasonings as needed.

For an even richer flavor, consider using fire-roasted diced tomatoes.
A pinch of smoked paprika can add a delightful smoky depth.
Feel free to adjust the amount of chili powder and brown sugar to your preference.
Add a splash of your favorite hot sauce for some heat.

The vinegar is a game changer! It adds such a nice tanginess that balances the richness of the chili perfectly.

I've made this recipe several times, and it's always a hit. Easy to customize with different beans or vegetables.
