Sauté Aromatics: Heat olive oil in a small skillet over medium heat. Add diced red onion, minced garlic, and minced fresh ginger. Sauté until the onion is softened and translucent, about 5 minutes. Remove from heat and allow to cool slightly.

Prepare Grill: Preheat an outdoor grill to medium-high heat. Lightly oil the grill grate to prevent sticking.

Combine Ingredients: In a large bowl, gently combine ground chicken, panko bread crumbs, teriyaki sauce, salt, and pepper. Add the cooled sautéed onion mixture and mix gently with your hands until just incorporated. Do not overmix.

Form Patties: Divide the chicken mixture into 4 equal portions and form into burger patties, about 3/4 inch thick.

Grill Burgers: Place the patties on the preheated grill and cook for 5-6 minutes per side, or until cooked through and no longer pink inside. During the last minute of cooking, place a slice of provolone cheese on top of each patty to melt.

Grill Pineapple: While the burgers are cooking, grill the pineapple slices alongside them for about 1 minute per side, or until they are heated through and have slight grill marks.

Assemble Burgers: Lightly spread mayonnaise on the cut sides of the hamburger buns. Place the cooked chicken patties on the bottom buns, top with grilled pineapple slices, and jalapeño pepper slices (if using). Cover with the top buns and serve immediately.

For an extra burst of flavor, marinate the pineapple slices in a little teriyaki sauce before grilling.
If you don't have an outdoor grill, you can cook the burgers in a skillet on the stovetop over medium heat.
For a spicier burger, finely mince the jalapeños and incorporate them directly into the chicken mixture before forming the patties. Be sure to adjust the amount to your spice preference.
Serve with your favorite burger sides, such as sweet potato fries, coleslaw, or a side salad.
