Follow The Directions

01

Step

In a large pan with a lid, bring 1/4 cup of chicken stock to a simmer over medium heat. Add the chopped bell peppers and diced onion. Simmer until the vegetables begin to soften, about 3 minutes.

02

Step

Stir in the drained black beans and continue to simmer for an additional 2 minutes.

03

Step

Pour the remaining chicken stock into the pan. Add the Knorr® Fiesta Sides™ - Mexican Rice or Spanish Rice, stir well to combine, cover the pan, and simmer for 5 minutes, stirring frequently to prevent sticking.

04

Step

Gently fold in the sliced chicken, ensuring it is coated with the pan sauce. Cook until the rice is fully cooked and the chicken is heated through, approximately 2 to 5 minutes. Stir lightly to prevent the rice from sticking to the bottom of the pan.

05

Step

Warm the flour tortillas according to package instructions or in a dry skillet. Sprinkle a generous amount of Cheddar cheese on each warm tortilla, then top with the flavorful chicken, rice, and pepper mixture. Add more cheese, roll them up tightly, and serve immediately.

For an extra layer of flavor, consider adding a dash of chili powder or cumin to the vegetables while they are simmering.
If you prefer a spicier fajita, add a pinch of cayenne pepper or a finely chopped jalapeño to the pan during the initial simmering stage.
To prevent the rice from sticking, use a non-stick pan or add a tablespoon of olive oil to the pan before simmering.
Feel free to substitute the chicken with cooked shrimp, steak, or tofu for a vegetarian option.
Garnish with your favorite toppings, such as sour cream, guacamole, salsa, or chopped cilantro.
