Make a vertical slice in the top center of each breast, about 1/2 inch in from each edge. Cut horizontally into the chicken breast in both directions, creating a spacious pocket. (10 minutes)

Stuff the chicken: Evenly distribute the pepper-cheese mixture into each chicken breast pocket. Close the pockets and secure them with toothpicks. (5 minutes)

Grill the chicken: Place the chicken on the preheated grill with the toothpicks facing upwards. Grill for 12 minutes, then turn and continue to cook until the chicken is no longer pink inside and the juices run clear. This should take approximately 3 to 5 more minutes. For a milder flavor, remove the membranes from the jalapenos in addition to the seeds.

If you don't have an outdoor grill, you can bake the chicken in a preheated oven at 375 degrees F (190 degrees C) for 20-25 minutes, or until cooked through.
