For a smoother soup, use an immersion blender to partially blend the soup before serving. Leave some chunks for texture.
A squeeze of fresh lemon juice adds brightness.
Garnish with a swirl of cream (dairy or non-dairy) or a sprinkle of fresh herbs, such as parsley, chives, or dill.
Add a pinch of red pepper flakes for a touch of heat.
