Step

In a large pot or Dutch oven, heat over medium heat. Add the turkey sausage and cook, breaking it up with a spoon, until browned and crumbly (5-7 minutes).

Add the carrots, onion, mushrooms, and 1/4 cup of the parsley to the pot. Cook, stirring occasionally, until the onion is softened and translucent (7-10 minutes). Stir in the minced garlic and cook for another minute until fragrant.

Pour in the water and add the undrained garbanzo beans, beef bouillon cubes, and dried sage. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer until the carrots are tender (about 10 minutes).

Skim off any accumulated fat from the surface of the soup. Season with salt and pepper to taste. Garnish with the remaining parsley before serving.

For a richer flavor, use Italian sausage with higher fat content, such as sweet or hot Italian pork sausage.
Feel free to add other vegetables to the soup, such as zucchini, spinach, or diced tomatoes.
If you prefer a smoother soup, you can use an immersion blender to partially blend it before serving.
This soup tastes even better the next day, as the flavors have time to meld together. Store leftovers in an airtight container in the refrigerator for up to 3 days.
