Follow The Directions

Bring a large pot of salted water to a rolling boil. (5 minutes)

Gently add scallops, shrimp, mussels, and calamari to the boiling water and cook for exactly 2 minutes. The seafood should be just cooked through and still tender. (2 minutes)

Immediately drain the seafood and transfer it to an ice bath to stop the cooking process. (2 minutes)

In a large bowl, combine the cooked seafood, olives, lemon juice, olive oil, minced garlic, parsley, chives, and red pepper flakes. (5 minutes)

Ensure the mussels are thoroughly cleaned before cooking. Discard any mussels that do not open during cooking.
Do not overcook the seafood, as it will become rubbery. The goal is to cook it just until it is opaque and firm to the touch.
The marinating time can be adjusted to your preference. For a more intense flavor, marinate the seafood for up to 4 hours.
For an extra layer of flavor, grill the lemon slices before using them as garnish. The charred lemon adds a smoky and slightly sweet note.
If you don't have fresh mussels, you can substitute with canned smoked mussels for a different flavor profile.
