For a thicker soup, use an immersion blender to partially blend some of the soup before serving. If you don't have an Instant Pot, this recipe can be made on the stovetop. Simmer on low for 2-3 hours, or until the beans are tender. Feel free to add other vegetables, such as diced bell peppers or zucchini. Store leftover soup in an airtight container in the refrigerator for up to 3 days.
