Follow The Directions

Step

Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add olive oil and butter. Once melted, add mushrooms and onion. Sauté for 5 minutes until softened. Add minced garlic and sauté for 30 seconds more until fragrant. Transfer the mixture to a bowl.

Add thinly sliced sirloin steak, Italian seasoning, garlic salt, and ground black pepper to the pot. Sauté until browned, approximately 5 minutes. Stir the cooked sirloin mixture into the bowl with the sautéed mushroom and onion mixture, combining thoroughly.

Wash out the pressure cooker insert to remove any browned bits. Add 1/2 cup of water to the pressure cooker and place a steamer rack inside.

Place 1 slice of provolone cheese in the bottom of each bell pepper half. Generously fill each pepper half with the sirloin-mushroom mixture. Cover each stuffed pepper half securely with aluminum foil.

Carefully place the foil-covered stuffed peppers on the steamer rack inside the pressure cooker. Close and lock the lid securely. Select high pressure according to the manufacturer's instructions; set the timer for 25 minutes. Allow 10 to 15 minutes for the pressure to build inside the pot.

While the peppers are cooking, position an oven rack about 6 inches from the heat source and preheat the oven's broiler to high.

Once the cooking time is complete, carefully release the pressure using the quick-release method according to the manufacturer's instructions, which should take about 5 minutes. Unlock and carefully remove the lid. Transfer the peppers to a rimmed baking sheet and remove the aluminum foil.

Top each pepper with another slice of provolone cheese. Broil the peppers under the preheated broiler until the cheese is melted and lightly golden brown, approximately 1 to 3 minutes. Watch carefully to prevent burning.

For a spicier kick, add a pinch of red pepper flakes to the sirloin mixture while sautéing.
Feel free to experiment with different types of cheese. Mozzarella or Monterey Jack would also be delicious.
If you don't have an Instant Pot®, you can bake these in a preheated oven at 375°F (190°C) for about 30-40 minutes, or until the peppers are tender.
