For a richer flavor, try browning the ground beef with a tablespoon of butter or olive oil.
If you prefer a thicker soup, you can add a slurry of cornstarch and water (1 tablespoon cornstarch mixed with 2 tablespoons cold water) during the last few minutes of cooking.
Feel free to customize the vegetables to your liking. Potatoes, green beans, or peas would all be delicious additions.
This soup freezes beautifully! Allow it to cool completely before transferring it to freezer-safe containers or bags. It will thicken when cooled, but thins when reheated.
If you don't have an Instant Pot, you can easily make this soup on the stovetop. Simply follow the same steps, but simmer the soup for about 1-1.5 hours, or until the vegetables are tender.
