For a richer flavor, use freshly grated sharp cheddar cheese instead of pre-shredded.

If you don't have fresh cilantro, dried cilantro can be substituted, but fresh is recommended for the best flavor.
This dip can be made ahead of time and stored in the refrigerator for up to 24 hours. Add 5-10 minutes to the baking time if baking from cold.
