For a richer flavor, brown the ground beef with a tablespoon of olive oil before adding the vegetables. Feel free to add other vegetables you enjoy, such as celery, peas, or zucchini. If you prefer a thicker soup, you can add a tablespoon of flour or cornstarch to the beef mixture before adding the liquid. This soup can be easily made in a slow cooker. Simply brown the beef and then add all ingredients to the slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours.
