For best results, use whole milk. Lower fat milks may not curdle as effectively. If you don't have lemon juice, white vinegar can be used as a substitute in equal measure. The buttermilk should have a slightly thickened consistency with small curdles. This is perfectly normal. This buttermilk is best used immediately. If you need to store it, refrigerate and use within 24 hours. However, its texture may change slightly.
