Heat a medium skillet over medium-high heat. Add olive oil. Add ground chicken and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Stir in taco seasoning to coat. Remove from heat and set aside to cool slightly.

In a large bowl, whisk together the beaten eggs, shredded Cheddar cheese, milk, finely chopped red bell pepper, shallot, mushrooms, chives, jalapeno pepper, and hot sauce. Season with salt and pepper to taste. Gently fold in the cooled chicken mixture.

Pour the egg mixture into nonstick mini muffin tins, filling each cup about 3/4 full.

Bake in the preheated oven until the eggs are set and the muffins are golden brown, approximately 18 minutes. A toothpick inserted into the center should come out clean.

For a spicier kick, use pepper jack cheese instead of cheddar or add a pinch of cayenne pepper to the egg mixture.
These muffins can be stored in the refrigerator for up to 3 days or frozen for longer storage. Reheat in the microwave or oven until warmed through.
Customize your muffins by adding other favorite taco toppings such as black beans, corn, or diced tomatoes.
