Follow The Directions

01

Step

Bloom the Yeast: In a small bowl, dissolve 1 tablespoon of sugar in warm water. Sprinkle the yeast over the water and let stand until foamy, about 5 minutes.

02

Step

Combine Dry Ingredients: In a large bowl, whisk together all-purpose flour, whole wheat flour, and potato flakes. Set aside.

03

Step

Combine Wet Ingredients: In a separate large bowl, combine buttermilk, softened butter, 2 tablespoons of sugar, egg, and salt. Add the yeast mixture to the wet ingredients.

04

Step

Form the Dough: Gradually add the flour mixture to the wet ingredients, mixing until a soft dough forms. Turn the dough out onto a well-floured surface and knead until smooth and elastic, about 8-10 minutes.

05

Step

First Rise: Shape the dough into a ball, lightly grease the surface with vegetable oil, and place it in a bowl. Cover and let rise in a warm place until doubled in size, about 1-1.5 hours.

06

Step

Shape and Second Rise: Gently punch down the dough. Divide it into 9 equal pieces and shape each piece into a ball. Grease an 8x8-inch baking dish and arrange the dough balls in the dish, allowing them to slightly touch. Brush the tops with about 1 tablespoon of melted butter. Cover with plastic wrap and let rise in a warm place until doubled in size, 30-45 minutes. The balls should rise above the edge of the dish.

07

Step

Bake: Preheat the oven to 400 degrees F (200 degrees C). Bake the rolls until golden brown, 25-30 minutes.

08

Step

Finish: Brush the tops of the hot rolls with the remaining melted butter. Let cool slightly before turning them out of the dish and pulling them apart. Serve warm.

For an even richer flavor, substitute brown butter for the melted butter brushed on top before baking.
Ensure your buttermilk is not too hot, as this can inhibit the yeast's activity.
If your dough is too sticky, add flour 1 tablespoon at a time until it becomes manageable.
The rising times may vary depending on the temperature of your environment. Be patient and allow the dough to fully double in size for the best results.
Potato flakes contribute to the soft texture of the rolls, but they can be omitted if necessary.
