In a medium saucepan, combine water, granulated sugar, hibiscus flowers, brown sugar, ginger, and lemon zest. (2 minutes)

Bring the mixture to a boil over medium-high heat, then reduce heat to low and simmer gently until the sugars are completely dissolved and the hibiscus flowers have softened, about 10 minutes.

Remove the saucepan from the heat and allow the syrup to steep, letting the flavors meld and deepen, for approximately 5 minutes.

Strain the syrup through a fine-mesh strainer into a clean container. Use a spoon to press the solids, extracting every last drop of flavorful liquid. Discard the spent solids.

Transfer to an airtight container and store in the refrigerator. The syrup will keep for up to 2 weeks.

For a spicier syrup, add a small piece of chili pepper along with the ginger.
Use organic hibiscus flowers for the purest flavor.
This syrup is delicious drizzled over pancakes or waffles.
Try using this syrup in a vinaigrette for a unique salad dressing.
The syrup can also be frozen for longer storage.
