In a large skillet or sauté pan, melt the butter over medium heat. (2 minutes)

Add the carrots and minced shallot to the pan. Cook, stirring frequently, until the carrots are glistening and the shallots are softened but not browned. (Approximately 5 minutes).

Pour in the vegetable broth, then stir in the thyme, grated nutmeg, and ground sumac. (1 minute)

Cover the pan, reduce the heat to low, and simmer gently, stirring occasionally, until the carrots are tender and most of the liquid has been absorbed, creating a light glaze. (12-15 minutes)

Remove from heat. Garnish generously with chopped fresh rosemary and sage. Season to taste with sea salt and freshly ground white pepper. Serve immediately.

For a richer flavor, substitute chicken broth for vegetable broth.
A pinch of red pepper flakes can add a subtle warmth.
If using regular carrots, peel and slice them into 1/4-inch thick rounds before braising.
Fresh herbs are preferred, but dried herbs can be substituted. Use half the amount of dried herbs if substituting.
