Prepare the Yogurt (8-12 hours): Line a colander with two layers of cheesecloth and set it over a medium-sized bowl. Spoon the yogurt into the cheesecloth-lined colander. Cover with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the yogurt to drain and thicken. This step is crucial for achieving the signature thick consistency of Haydari.

Combine Ingredients (10 minutes): Transfer the drained yogurt to a mixing bowl. In a mortar and pestle (or using the side of your knife), mash the minced garlic with the salt until it forms a smooth paste. Add the garlic paste to the yogurt.

Incorporate Herbs and Cream Cheese (5 minutes): Gently stir in the chopped dill, parsley, and softened cream cheese into the yogurt and garlic mixture until well combined. Ensure the cream cheese is fully incorporated for a smooth and creamy texture.

Chill and Serve (30 minutes or longer): Transfer the Haydari to a serving dish. Cover and refrigerate for at least 30 minutes to allow the flavors to meld together. Before serving, drizzle with olive oil (if using) and garnish with fresh mint leaves. Serve with warm pita bread, grilled meats, or your favorite crudités.
For a tangier flavor, use Greek yogurt. However, be mindful that it will drain faster, so check it periodically.
Adjust the amount of garlic to your preference. Start with less and add more as needed.
If you don't have fresh herbs, you can use dried herbs, but use them sparingly (about 1 teaspoon each) as they have a more concentrated flavor.
For a smoother dip, you can use a food processor to blend all the ingredients together. However, be careful not to over-process, as this can make the dip too thin.
Haydari can be stored in an airtight container in the refrigerator for up to 3 days.

Feb 9, 2025I didn't have any fresh parsley on hand, so I substituted with dried parsley. It still tasted great, but I'll definitely use fresh parsley next time. I also added a squeeze of lemon juice for extra tang. Will make it again soon!
