Gather all of your ingredients and have them measured and ready to go. (5 minutes)

In a medium saucepan, combine the water, guava paste, apple cider vinegar, dark rum, tomato paste, fresh lemon juice, minced onion, minced fresh ginger root, soy sauce, ketchup, Worcestershire sauce, minced garlic, and scotch bonnet pepper. (5 minutes)

Place the saucepan over medium-high heat and bring the mixture to a simmer, whisking constantly until the guava paste is fully dissolved and all ingredients are evenly blended. Season to taste with kosher salt and pepper. (5 minutes)

Reduce the heat to medium-low and allow the sauce to simmer gently, uncovered, for 10 to 15 minutes, or until it has thickened slightly and the flavors have melded together beautifully. The sauce should be easily pourable; if it becomes too thick, simply add a tablespoon or two of water to reach your desired consistency. (15 minutes)

Remove from heat and let cool slightly before using. This sauce can be served hot or cold, depending on your preference. (5 minutes)

For a smoother sauce, use an immersion blender to blend the sauce after simmering.
If you don't have scotch bonnet peppers, habanero peppers or a pinch of cayenne pepper can be used as a substitute.
This sauce can be stored in an airtight container in the refrigerator for up to 1 week.
