For an extra smoky flavor, add a handful of wood chips (such as hickory or mesquite) to your grill's smoker box or wrap them in foil and place them directly on the coals. If you don't have a grill, you can also roast the corn in the oven. Preheat your oven to 400°F (200°C) and roast the corn (in its husks) for 30-35 minutes, turning halfway through. The cilantro-lime butter can be made several days in advance and stored in the refrigerator. Let it soften slightly before using.
