Preheat an outdoor grill to medium-high heat and lightly oil the grate. (Prep time: 5 minutes)

In a small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, garlic powder, salt, and pepper. (Prep time: 2 minutes)

Remove any loose or damaged outer leaves from the cabbage. Trim the stem so that the cabbage sits flat and stable on your cutting board. Carefully cut the cabbage vertically into six 3/4-inch-thick 'steaks'. Place the cabbage steaks on a baking sheet. (Prep time: 5 minutes)

Brush one side of each cabbage steak generously with the olive oil mixture. (Prep time: 2 minutes)

Place the cabbage steaks on the preheated grill, oiled-side down. Close the grill lid and cook for 5 minutes.

Brush the tops of the cabbage steaks with more of the oil mixture. Gently flip the steaks over. Close the lid and continue grilling until the cabbage is tender-crisp and slightly charred, approximately 5 to 7 minutes more. Use tongs to carefully monitor the charring. (Cook time: 5-7 minutes)

Remove the grilled cabbage steaks from the grill and transfer them to a serving platter. Drizzle with any remaining oil mixture. Serve immediately.

For an extra layer of flavor, try adding a pinch of red pepper flakes to the oil mixture.
Balsamic vinegar can be used instead of white wine vinegar.
Ensure the grill is hot enough to create good char marks, but not so hot that the cabbage burns before it cooks through.
These cabbage steaks are delicious served with a squeeze of fresh lemon juice.
