Pour in the vegetable broth and bring to a boil over high heat. Stir in the lentils, reduce heat to medium, and simmer until the lentils are tender, approximately 45 minutes.

Incorporate the chopped kale, Swiss chard, and mustard greens into the simmering broth. Continue to simmer until the greens are tender, about 5 to 10 minutes.

Stir in the nutritional yeast, garlic powder, thyme, pepper, and salt. Allow the stew to cool slightly for about 10 minutes.

Carefully transfer the stew to a blender and puree until smooth and creamy. Pour the pureed stew back into the pot and reheat gently for about 5 minutes, or until warmed through.

Feel free to experiment with different combinations of leafy greens based on what you have available or prefer.
For a richer flavor, consider using a high-quality vegetable broth or adding a splash of dry white wine during the initial sautéing of the onions.
If you prefer a chunkier stew, you can skip the blending step or only partially blend it to your desired consistency.
This stew is delicious served with crusty bread for dipping, or over a bed of fluffy rice or quinoa.
