Drain the beans and transfer them to the baking sheet with the onions. Spread the vegetables out to cool.

In a microwave-safe container, heat the milk, chicken broth, and Dijon mustard until steamy. In the same skillet, melt the remaining 2 tablespoons of butter. Whisk in the flour, then gradually whisk in the hot milk mixture until smooth and simmering.

Add the beans and onions to the sauce and simmer until the sauce is thick enough to coat the vegetables (about 5 minutes). Season with salt and pepper to taste.

Transfer to a serving bowl, sprinkle with toasted almonds, and serve immediately.

For a richer flavor, consider using heavy cream instead of milk.
To toast the almonds, spread them on a baking sheet and bake in a preheated 325°F (160°C) oven for 5-7 minutes, or until fragrant and lightly golden. Watch carefully to prevent burning.
This dish can be prepared ahead of time. The vegetables and sauce can be made separately and combined just before serving. If making ahead, cover the sauce with plastic wrap to prevent a skin from forming.
A splash of lemon juice or a dash of nutmeg added to the sauce can brighten the flavor.
