For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.
If you don't have almond milk, regular milk or another non-dairy milk alternative works well.
Fresh or frozen blueberries can be used; if using frozen, do not thaw before adding to the batter.
Serve immediately with a drizzle of maple syrup, a dollop of Greek yogurt, or a dusting of powdered sugar.
