For a vegetarian version, omit the bacon and use 2 tablespoons of butter or olive oil to sauté the vegetables. Consider adding a pinch of smoked paprika to mimic the smoky bacon flavor. To thicken the chowder, mash a portion of the potatoes against the side of the pot before adding the half-and-half. This chowder is even better the next day! Store leftovers in an airtight container in the refrigerator.
