In a large skillet over medium heat, render the bacon lardons until crispy and golden brown. Remove the bacon with a slotted spoon and set aside, reserving the rendered bacon fat in the pan. (5-7 minutes)

Add the sliced onions to the skillet with the bacon fat and sauté until softened and caramelized, about 8-10 minutes. Remove the onions from the skillet and set aside. Deglaze the pan with the balsamic vinegar, scraping up any browned bits from the bottom. Reduce the vinegar by half, creating a luscious glaze. (5 minutes)

In a large bowl, combine the cooked potatoes, green beans, bacon lardons, and caramelized onions. Pour the balsamic glaze over the salad and toss gently to coat all the ingredients. Season generously with sea salt and freshly ground black pepper to taste. Serve warm or at room temperature.

For an even more intense flavor, consider using smoked paprika when seasoning the dish.
If serving cold, allow the salad to marinate in the balsamic glaze for at least 30 minutes to allow the flavors to meld.
To elevate the dish further, add a handful of fresh parsley or chives, chopped finely.
Feel free to substitute other types of potatoes such as red potatoes.
If you don't have balsamic vinegar you can use red wine vinegar.
