For an even more intense flavor, roast fresh beets instead of using canned. Toss the beets with olive oil, salt, and pepper and roast at 400°F (200°C) until tender, about 45 minutes.
A sprinkle of fresh dill or parsley adds a bright, herbaceous note.
A drizzle of balsamic glaze can add a touch of sweetness and acidity that complements the beets and feta beautifully.
Feel free to use golden beets or Chioggia beets for a more colorful salad.
