Follow The Directions

01

Step
5 mins

In a large bowl, combine the chicken, minced garlic, 1 tablespoon of olive oil, sea salt, and freshly ground black pepper. Toss well to ensure the chicken is evenly coated. (5 minutes)

02

Step
8 mins

Preheat a large non-stick skillet over medium-high heat until hot. Add the marinated chicken to the skillet in a single layer. Cook, stirring occasionally, until the chicken is golden brown on all sides, cooked through, and the juices run clear when pierced with a fork. Transfer the cooked chicken to a clean plate and set aside. (6-8 minutes)

03

Step
5 mins

Return the skillet to medium heat and add the remaining 1 tablespoon of olive oil. Add the pre-sliced zucchini to the skillet and cook, stirring occasionally, until the zucchini is tender-crisp and starting to brown around the edges. (5 minutes)

04

Step
3 mins

Add the cooked chicken back to the skillet with the zucchini. Toss gently to combine and heat through, allowing the flavors to meld. (2-3 minutes)

05

Step

Sprinkle the grated Parmesan cheese and fresh Italian parsley over the chicken and zucchini mixture. Serve immediately over hot cooked rice or noodles.

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the chicken marinade.
If you don't have fresh parsley on hand, dried Italian seasoning can be used as a substitute. Adjust the amount to your liking.
Feel free to experiment with other vegetables such as bell peppers, onions, or mushrooms for added nutrients and texture.
To prevent the garlic from burning, add it to the skillet after the chicken has started to brown.
