For a milder flavor, remove the seeds and membranes from the jalapenos before chopping. If you don't have fresh corn, you can substitute with 4 cups of frozen corn, thawed and drained. The salad can be made ahead of time, but add the crushed corn chips just before serving to prevent them from getting soggy. Feel free to adjust the amount of jalapeno to your spice preference. Try adding a can of drained and rinsed black beans for extra flavor and protein.
