Follow The Directions

In a pressure cooker, heat the olive oil over medium heat. (2 minutes)

Add the diced red bell pepper and red onion to the pot. Cook, stirring occasionally, until the onion becomes softened and translucent. (5 minutes)

Add the smashed garlic and cook until it turns golden and fragrant. (1 minute)

In a separate bowl, dissolve the tomato paste in 1 cup of water. Pour this mixture into the pressure cooker.

Arrange the chicken thighs and drumsticks evenly in the pressure cooker. Add enough water to almost cover the chicken.

Seal the pressure cooker and bring it up to full pressure over high heat.

Once at full pressure, reduce the heat to low and maintain the pressure, cook for 15 minutes.

Turn off the heat and allow the pressure to release naturally. (20 minutes)

Carefully open the pressure cooker and season the chicken with salt to taste.

For a richer flavor, consider browning the chicken pieces in the olive oil before adding the vegetables. This adds depth and color to the dish.
If you don't have a pressure cooker, you can simmer this dish in a large pot or Dutch oven. Increase the cooking time to approximately 45-60 minutes, or until the chicken is cooked through and tender.
Adjust the amount of water as needed to maintain a simmering consistency during cooking.
