Make the Custard: Heat 10 fluid ounces of heavy cream in a medium saucepan over medium heat until it just begins to simmer. While the cream is heating, whisk together the egg yolks and sugar in a heatproof bowl until the mixture is pale yellow and smooth. Gradually pour the hot cream into the egg yolk mixture, whisking constantly to temper the eggs. Strain the mixture through a fine-mesh sieve into a clean bowl to ensure a silky-smooth custard. Return the custard mixture to the saucepan and cook over low heat, stirring continuously with a wooden spoon, until the custard thickens enough to coat the back of the spoon. Be careful not to let it boil. Remove from heat and let the custard cool completely, stirring occasionally to prevent a skin from forming. (25 minutes)
