In a blender, combine the drained fire-roasted tomatoes, drained beets, tomato paste, and 1/2 cup of beef stock. Puree until completely smooth. (5 minutes)

Pour the pureed tomato mixture into a saucepan. Add the remaining beef stock, sugar, dried dill, and hot pepper sauce. Season with salt and pepper to your liking. (2 minutes)

Bring the soup to a gentle simmer over medium heat. Reduce the heat to medium-low and allow the soup to cook, uncovered, until the flavors have melded together, about 30 minutes. Stir occasionally to prevent sticking.

For a richer flavor, roast the beets yourself! Simply wrap them in foil and roast at 400°F (200°C) until tender, about 45-60 minutes. Let them cool slightly before peeling and using.
If you don't have beef stock, vegetable stock works well too. For a vegetarian option, ensure that no meat products are used.
Adjust the amount of sugar and hot pepper sauce to suit your taste. Start with the recommended amounts and add more as needed.
A swirl of sour cream or a dollop of Greek yogurt adds a nice tangy finish.
This soup can be made ahead of time and reheated. The flavors actually improve as it sits!
