Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, red bell pepper, and garlic and cook, stirring occasionally, until softened, about 8-10 minutes.

Add the cauliflower florets and chicken stock to the pot. Bring to a boil, then reduce heat and simmer until the cauliflower is tender, about 10-12 minutes.

Remove the pot from heat and carefully blend the soup using an immersion blender until smooth and creamy. Alternatively, you can transfer the soup in batches to a regular blender.

Return the pot to low heat and stir in the curry powder, butter (or coconut oil), hot sauce, salt, and pepper. Simmer for another 15 minutes, allowing the flavors to meld together beautifully. Adjust seasonings to taste.

For a richer flavor, try roasting the cauliflower florets before adding them to the soup.
Garnish with a swirl of coconut milk, a sprinkle of fresh cilantro, or a dollop of Greek yogurt for extra flavor and texture.
This soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
Feel free to experiment with other vegetables, such as potatoes, sweet potatoes, or butternut squash.
