In a medium-sized mixing bowl, combine the finely chopped sweet green pickle relish, tomato paste, minced roasted red peppers with garlic, white vinegar, white sugar, liquid smoke flavoring, ground black pepper, and ground cinnamon. (2 minutes)

Thoroughly mix all ingredients until a uniform, vibrant red color is achieved. Ensure no streaks of tomato paste remain. (3 minutes)

Taste and adjust seasonings as needed. Add a touch more sugar for extra sweetness, vinegar for tanginess, or liquid smoke for a deeper smoky flavor. (2 minutes)

For a smoother relish, pulse the pickle relish and roasted red peppers in a food processor before mixing.
Adjust the amount of liquid smoke to your preference. Start with 6 drops and add more to taste for a smokier flavor.
This relish can be stored in the refrigerator for up to 2 weeks.
