Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper. (5 minutes)

Slice a small piece off the rounded side of each potato half so they sit flat and stable. Score the flat sides in a diamond pattern, cutting down about 1/2 inch deep, being careful not to cut all the way through. (10 minutes)

Drizzle half of the olive oil over the diamond cuts, then sprinkle evenly with half of the smoked paprika and sea salt. Place potatoes, seasoned-side down, on the prepared baking sheet. Drizzle the remaining oil, smoked paprika, and salt over the other side. (5 minutes)

Roast in the preheated oven for 30 minutes. Flip the potatoes and continue to roast until golden brown and cooked through, approximately 30 more minutes. (60 minutes)

For extra flavor, try adding a pinch of garlic powder or onion powder along with the smoked paprika.
Ensure the potatoes are dry before adding the oil; this helps them crisp up beautifully.
Adjust cooking time based on the size of your potatoes. They are done when easily pierced with a fork.
