Repeat with the remaining batter, adding more oil to the griddle as needed. (Variable time)

For extra chocolate flavor, add 1/2 cup of chocolate chips to the batter.
If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of white vinegar or lemon juice to 1 cup of milk. Let it sit for 5 minutes before using.
To keep the pancakes warm while cooking the remaining batter, place them on a baking sheet in a preheated 200°F (95°C) oven.
For a richer flavor, try using melted butter instead of vegetable oil.
