Follow The Directions

01

Step

In a large skillet or Dutch oven over medium heat, cook bacon until crisp and evenly browned (8-10 minutes). Remove bacon with a slotted spoon and set aside, reserving 2 tablespoons of bacon fat in the skillet.

02

Step

Add the chopped onion and green bell pepper to the skillet and sauté in the bacon fat until softened, about 5-7 minutes.

03

Step

Stir in the chopped tomatoes, green beans, salt, and pepper. Cover the skillet and simmer for 15 minutes, allowing the vegetables to soften.

04

Step

Add the fresh corn kernels, cover, and continue cooking until all vegetables are tender, about 20 minutes.

05

Step

In a small bowl, whisk together the flour and water to create a smooth slurry.

06

Step

Stir the flour slurry into the vegetables, and cook until the sauce thickens slightly, about 2 minutes.

07

Step

Remove the skillet from the heat and gently stir in the evaporated milk. Crumble the cooked bacon over the top.

08

Step

Serve immediately, enjoying the warm and comforting flavors of this Creole vegetable dish.

For a spicier kick, add a pinch of cayenne pepper or a dash of your favorite hot sauce to the vegetables while they are simmering.
If you don't have fresh corn, frozen corn kernels can be used. Add them during the last 10 minutes of cooking time.
Feel free to add other vegetables to the mix, such as okra, zucchini, or diced potatoes. Adjust cooking times accordingly.
