In a 4-quart Dutch oven or large pot, cook bacon over medium heat until crisp, about 4-6 minutes. Remove bacon with a slotted spoon and set aside on paper towels, reserving bacon fat in the pot.

Add onion, bell pepper, and celery to the pot and cook in the rendered bacon fat over medium heat, stirring occasionally, until softened, about 5-7 minutes. Add garlic and cook for another minute until fragrant.

Return the chicken and cooked bacon to the pot. Stir in frozen baby lima beans, crushed fire-roasted tomatoes, and chicken broth. Season with Creole seasoning, salt, and pepper to taste.

Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and lima beans are tender. Ensure the internal temperature of the chicken reaches 165°F (74°C).

For an extra layer of flavor, consider adding a splash of hot sauce or a pinch of cayenne pepper to the stew.
Serve with a side of fluffy white rice or crusty bread for soaking up the delicious broth.
Feel free to adjust the amount of Creole seasoning to your liking. Start with a smaller amount and add more as needed.
If you don't have fire-roasted tomatoes, regular crushed tomatoes will work just fine.
